Cocoa Raspberry Muffins
Serves 8
  1. ½ cup all-purpose flour
  2. ½ cup cocoa powder, unsweetened
  3. ½ cup sugar
  4. ½ teaspoon baking soda
  5. ½ teaspoon baking powder
  6. ½ cup applesauce
  7. ½ cup raspberry jam
  8. 3 egg whites
  9. 1 teaspoon vanilla

  1. In a mixing bowl blend first five ingredients. In a separate bowl blend the remaining ingredients. Combine ingredients from both bowls and mix well. Spoon into muffin cups and bake at 350 degrees for 18-20 minutes or until muffins spring back when tapped.
