This simple 8 ingredient tomato soup is about as easy and nutritious as it gets. A quick after school snack or the perfect way to warm up after a chilling Friday night football game.
Ingredients
  1. 8 medium tomatoes
  2. 2 tbsp extra virgin olive oil
  3. 1 shallot chopped
  4. 1 clove garlic chopped
  5. ½ tsp each dried basil and oregano]
  6. ½ tsp each salt and pepper
  7. 3 tbsp fresh basil leaves chopped
  8. ¼ cup Parmesan cheese, grated

Instructions
  1. Peel and dice tomatoes. Put in blender and blend until smooth. Heat olive oil in a saucepan over medium heat. Add shallot, garlic, and herbs, and cook until soft, about 4 minutes. Add tomatoes, salt, and pepper to saucepan. Simmer for 5 minutes. Ladle into 4 bowls. Top with fresh basil and a sprinkle of Parmesan cheese.
